Lemon rice is a south indian rice recipe with a tangy and delicious taste.A nice variation to the rice which is loved by most of the South Indians.

Ingredients:
1 cup cooked rice
2 tsp oil
1 tbsp urad dal (split black lentils)
1 tbsp chana dal (split bengal gram)
1 tsp mustard seeds ( rai / sarson)
1 tsp Ground nuts ( Phalli )
1 tsp turmeric powder (haldi)
1 tbsp lemon juice
2 green chillies , chopped
1 tsp chopped ginger (adrak)
4 to 5 curry leaves (kadi patta)
a pinch of asafoetida (hing)
salt to taste
2 tbsp lemon juice
5-6 Cashew nuts (kaju) for garnishing - Optional

Recipe:
- Heat the oil in a kadhai and add the mustard seeds.
- When the seeds crackle, add the chana dal,urad dal, ground nuts and hing (asafoetida) and saute till the dal turns reddish brown.
- Add the turmeric, green chillies, ginger, curry leaves and coriander and saute for 1 minute.
- Add the rice and mix well.
- Add the lemon juice, mix well
- Garnish with cashew nuts, coriander and serve hot.
