Lemon Rice / Yellow Rice

Lemon rice is a south indian rice recipe with a tangy and delicious taste.A nice variation to the rice which is loved by most of the South Indians.

Total Time: 30 mins     
Makes 2 servings 

Ingredients:
1 cup cooked rice 
2 tsp oil
1 tbsp urad dal (split black lentils)
1 tbsp chana dal (split bengal gram)
1 tsp mustard seeds ( rai / sarson)
1 tsp Ground nuts ( Phalli )
1 tsp turmeric powder (haldi)
1 tbsp lemon juice
2 green chillies , chopped
1 tsp chopped ginger (adrak)
4 to 5 curry leaves (kadi patta)
a pinch of asafoetida (hing)
salt to taste
2 tbsp lemon juice
5-6 Cashew nuts (kaju) for garnishing - Optional

Recipe: 

  1. Heat the oil in a kadhai and add the mustard seeds.
  2. When the seeds crackle, add the chana dal,urad dal, ground nuts and hing (asafoetida) and saute till the dal turns reddish brown.
  3. Add the turmeric, green chillies, ginger, curry leaves and coriander and saute for 1 minute.
  4. Add the rice and mix well.
  5. Add the lemon juice, mix well
  6. Garnish with cashew nuts, coriander and serve hot.
