Vegetable Idly


A colorful and tasty idli and indeed a very healthy recipe that you will enjoy to the core!




Soaking Time:  2 hours.   
Preparation Time: 10 mins   
Fermenting Time:  3 to 4 hours.   
Cooking Time: 12 mins   
Total Time: 6 hours 22 minutes    
Makes 20 idlis 

Ingredients:
3/4 cup grated carrot
1/2 cup grated cabbage
3/4 cup finely chopped onion
3 1/3 tbsp urad dal (split black lentils)
1 2/3 cups par-boiled rice (ukda chawal)
1/2 cup coconut milk
3/4 tsp cumin seeds (jeera)
1 2/3 tbsp grated coconut
salt to taste

Recipe:

  1. Wash and soak the urad dal and parboiled rice together for at least 2 hours.
  2. Drain and grind to a smooth paste in a mixer using the coconut milk.
  3. Transfer it to a deep bowl and add the onion, carrot, cabbage, cumin seeds, coconut and salt and mix well. Cover and allow to ferment in a warm place for 3 to 4 hours.
  4. Pour spoonfuls of batter into greased idli moulds and steam in a steamer for 10 to 12 minutes or till they are done.
  5. Serve hot with Sambar or coconut chutney.
