Aalo Bonda / Batata Vada

Aloo bonda is also known as the batata vada in Mumbai. Aloo bonda is a typical South Indian snack. It is a deep fried savory snack stuffed with potato spices mixture. Aloo bonda is crispy outside and soft inside.

Makes 10 vadas (10 vada )


Ingredients :
2 cups boiled, mashed potatoes
1 tbsp oil
2 tsp ginger, garlic - green chilli paste
1/4 tsp turmeric powder (haldi)
1 tbsp chopped coriander (dhania)
2 tsp lemon juice
2 tsp sugar
1 cup besan (bengal gram flour)
1/4 tsp red chilli powder
1 tbsp cumin seeds
a pinch of asafoetida (hing)
a pinch soda bi-carb
salt to taste
oil for deep-frying

Method :
  1. Heat 1tbsp oil in a broad pan, add the ginger, garlic - green chilli paste, turmeric powder, coriander, lemon juice, potatoes, sugar and salt, mix well and sauté on a medium flame for 3 to 4 minutes.
  2. Remove from the flame, cool and divide the mixture into 10 equal portions.
  3. Roll out each portion into a round and keep aside.
  4. Take a big bowl and mix besan, 1/4 tbsp red chilli powder, 1 tbsp cumin seeds, pinch of soda, salt to taste and mix all the ingredients well. Add water till this batter becomes consistently thick.
  5. Heat the oil in a kadhai. Dip the potato rounds in the prepared batter and deep-fry a few at a time on a medium flame, till they turn golden brown in colour from all the sides.
  6. Drain on absorbent paper and serve hot with green chutney.
