Oats khichdi recipe is one the most healthiest dinner with variety of vegetables in it.

Ingredients :
½ cup moong dal
1 cup rolled oats
cumin / jeera - 1 tsp
1 inch ginger chopped
1 green chilli chopped
onion finely chopped - 1 small
½ carrot chopped
4 beans chopped
4 cups water
½ tsp turmeric
pinch of hing / asafetida
1 tsp ghee
salt to taste

Recipe:
- First, wash and soak moong dal in water for 5 minutes.
- Heat the ghee in a pressure cooker, add cumin seeds and hing.
- when they sizzle, add curry leaves and ginger. saute till it turns aromatic.
- Now Add chopped onions, green chilli and saute till they change colour to pinkish.
- Add tomatoes and fry till they turn soft.
- Add carrot and beans (or veggies of your choice) and saute for about 2 to 3 minutes.
- Drain the water from half cup dal and add along with turmeric. fry for about 2 to 3 minutes.
- Now add 1 cup of oats, salt and fry for about 2 minutes.
- Pour 4 cups of water. and give a mix.
- You can adjust the quantity of water to make it mushy or slightly grainy. on a medium flame, pressure cook for two whistle.
- Finally, serve oats khichdi warm after garnishing with some coriander leaves with raita.
