Vada Pav

Vada Pav, alternatively spelt Vada Pao, Wada Pav, or Wada Pao, is a vegetarian fast food dish native to the Indian state of Maharashtra. It is originated as cheap street food in Mumbai, but is now served in food stalls and restaurants across India. It is also called Bombay Burger in keeping with its origins and its resemblance in physical form to a burger.

Makes 10 Vada Pavs 


Ingredients :
For Vada:

2 cups boiled, mashed potatoes
1 tbsp oil
2 tsp ginger, garlic - green chilli paste
1/4 tsp turmeric powder (haldi)
1 tbsp chopped coriander (dhania)
2 tsp lemon juice
2 tsp sugar
1 cup besan (bengal gram flour)
1/4 tsp red chilli powder
1 tbsp cumin seeds
a pinch of asafoetida (hing)
a pinch soda bi-carb
salt to taste
oil for deep-frying

For Pav:
Pav (kind of Indian bread)
Ghee / Butter for Greasing

For Garlic Chutney:
10-15 Peeled Garlic petals
1 cup dry coconut
2 tbsp Red Chilli powder
Salt to taste

Method :
  1. Heat 1tbsp oil in a broad pan, add the ginger, garlic - green chilli paste, turmeric powder, coriander, lemon juice, potatoes, sugar and salt, mix well and sauté on a medium flame for 3 to 4 minutes.
  2. Remove from the flame, cool and divide the mixture into 10 equal portions.
  3. Roll out each portion into a round and keep aside.
  4. Take a big bowl and mix besan, 1/4 tbsp red chilli powder, 1 tbsp cumin seeds, pinch of soda, salt to taste and mix all the ingredients well. Add water till this batter becomes consistently thick.
  5. Heat the oil in a kadhai. Dip the potato rounds in the prepared batter and deep-fry a few at a time on a medium flame, till they turn golden brown in colour from all the sides.Your Vadas are ready now.
  6. Heat a flat pan, Slice the Pav from the middle, heat the Pav by greasing it with butter / Ghee
  7. For dry garlic chutney - Add all the ingredients in a mixer and grind till it forms a dry powder.
  8. Now spread the garlic chutney on the pav, keep on Vada in the middle of pav and the yummy Vada pav is ready.
