Pumpkin is very healthy, highly Nutritious and Particularly Rich in Vitamin A. Its chutney gives a blend of sweet, sour and spicy taste.

Ingredients:
20 - 25 pieces of small cut pumpkin cubes
1 small cup sliced tomato
2 tsps split white Urad Dal
1 tbsp Jeera
1 tbsp Jeera
A pinch Hing
6 - 8 Red Chillies (As per spice level)
1 tbsp lemon juice
Salt as per taste
For tempering:
Mustard
Curry Leaves few
2 - 4 tsps Oil
Recipe:
- Remove the seeds, peel off the skin, wash, cut pumpkin into cubes.
- Heat oil in a kadhai. When oil is hot, add jeera, urad dal ,hing & red chillies fry till dal turns golden.
- Now add the Tomato cubes, pumpkin pieces and cook on high flame for 2 mins.
- We have to ensure that the pumpkin is half cooked - cover with a lid if required.
- Cool this mixture and grind to a smooth paste.Taste and adjust the ingredients if required .
- Tempering: Heat oil in a small pan. When oil is hot, add mustard,cumin seeds curry leaves.Now pour the tempering into the chutney, add lemon juice and mix well .
