Crispy Fried Brinjal / Vangyache Kaap

Crispy Fried Brinjal also called as Vangyache Kaap in Marathi is a yummy form of Brinjal. It can be served as a starter or during evening snacks.



Preparation Time - 15 mins
Cooking Time - 10 mins
Total Time - 25 mins

Ingredients - 

1 large Brinjal which is used for Bharta
1 tbsp Red Chilli powder
1/2 tbsp Haldi  (Turmeric) Powder
1/2 tbsp Dhania (Coriander) powder
1/2 tbsp Jeera (Cumin) powder
salt as per taste
2 cups Besan (Gram Flour)
4-5 tbsp Oil for roasting

Recipe -
  1. Slice the Brinjal into round shape about 0.5 cms in thickness
  2. Now sprinkle turmeric powder, red chilli powder, Dhania powder, Jeera powder, salt.
  3. Mix and coat all the spices evenly over the brinjal.
  4. Allow it to marinate for 10 mins.


5. Now take brinjal slices one after the other and coat them with Besan (Gram Flour) 


6. Heat the pan,add 2 tbsp oil and slowly add the coated brinjal slices one after the other.
7. Roast them on both the sides until crispy golden brown.
8. Serve Hot.
