Crispy Fried Brinjal also called as Vangyache Kaap in Marathi is a yummy form of Brinjal. It can be served as a starter or during evening snacks.
Preparation Time - 15 mins
Cooking Time - 10 mins
Total Time - 25 mins
Ingredients -
1 large Brinjal which is used for Bharta
1 tbsp Red Chilli powder
1/2 tbsp Haldi (Turmeric) Powder
1/2 tbsp Dhania (Coriander) powder
1/2 tbsp Jeera (Cumin) powder
salt as per taste
2 cups Besan (Gram Flour)
4-5 tbsp Oil for roasting
Recipe -
6. Heat the pan,add 2 tbsp oil and slowly add the coated brinjal slices one after the other.
7. Roast them on both the sides until crispy golden brown.
8. Serve Hot.

- Slice the Brinjal into round shape about 0.5 cms in thickness
- Now sprinkle turmeric powder, red chilli powder, Dhania powder, Jeera powder, salt.
- Mix and coat all the spices evenly over the brinjal.
- Allow it to marinate for 10 mins.
5. Now take brinjal slices one after the other and coat them with Besan (Gram Flour)
6. Heat the pan,add 2 tbsp oil and slowly add the coated brinjal slices one after the other.
7. Roast them on both the sides until crispy golden brown.
8. Serve Hot.
