Ingredients:
For Mint Paste:
1 Cup Mint leaves (Pudina)
1/2 cup Coriander leaves (Dhania)
5-6 petals of peeled Garlic petals (Lehsun)
6-7 Green Chillies (You can add more based on taste preference)
1/2 tbsp Cumin seeds (jeera)
Other Ingredients:
1 cup rice (Preferred Basmati rice) - Cook it and keep it ready
3-4 Boiled Potatoes
Oil - for deep frying
2-3 tbsp Ghee
2-3 cloves
1 Tez patta (Indian Bay leaf)
5-6 fried Cashew Nuts for Granishing (Optional)
Salt to taste
Recipe:
- Grind all the ingredients for Mint paste in mixer grinder - keep the Mint paste aside.
- Cut the boiled potatoes in cubes and deep fry them till they are light crispy brown - keep aside
- Now take kadhai and add 3-4 tbsp oil, once the oil is heated add cumin seeds, 2-3 cloves, 1 Tez patta - allow them to crackle.
- Add the Mint paste to the oil and stir for 1 min till the paste leaves oil.
- Now add fried potatoes and mix well.
- Add cooked rice, salt as per taste and mix well. Pour 2-3 tbsp Ghee to give enriched flavor to the rice.
- Mix well and serve hot with Onion Raitha.
