Stuffed Karela (Bittergourd)

Stuffed Karela is a dish that completely removes the bitter flavour from Bitter gourd and gives you a relishing taste. I have used Potatoes for filling in my recipe.




Ingredients -

3 Karela (Bitter Gourd)- medium sized
4 boiled and mashed medium sized potatoes
2 tbsp Red Chilli Powder
2 Onions finely grinded into paste
5-6 garlic cloves finely grinded into paste
1 tbsp Turmeric powder
1/2 tbsp Hing ( Asafoetida ) 
salt to taste
5 tbsp Oil
1 tbsp Cumin seeds (Jeera)
1 tbsp Mustard seeds (Rai )

Recipe -

For Stuffing - 

  1. Heat 2 tbsp Oil in kadhai, add mustard seeds, jeera seeds, allow them to crackle. Now add hing, turmeric powder.
  2. Add onion, garlic paste and saute for 2 mins. Now add Red Chilli powder, mashed potates and tbsp salt. Mix well.
  3. Add fresh Coriander leaves. Mix well and keep it aside for cooling.   




For Curry -

  1. Take 3 Karela and cut round in cylindrical shape as shown below -

2. Remove the Inner part of the Karela and boil it in water for 5-10 mins




2. Drain water and allow the Karela pieces to cool. 

3. Slowly add the stuffing in each Karela and keep it aside.



3. Once all the Karela pieces are stuffed, heat 3-4 tbsp oil in kadhai, add karela pieces one after the other. Cover it with a lid for 5-10 mins on a very lower flame.

4.Roast them till golden brown.
