Paneer Pulav & Raita Without using any Ready made Pulav masala or Biryani masala.

Ingredients: (Serving for 8 people) 3 cups Rice (Preferred Basmati rice) 1 cup vertically sliced carrots 2 cup vertically sliced Onions 1 cup vertically sliced Potatoes 1 cup vertically sliced Capsicum 1 tbsp garam masala 1/2 cup French beans 10-12 garlic cloves 1 inch ginger piece 1 small piece dried coconut 3 tbsp Curd 1 tbsp fresh curd 5-6 bay leaves (Tej patta) 10-11 cloves (laung) 3-4 Black pepper 2 Cardamon (Elaichi) salt as per taste Oil for deep frying Paneer - 200gms Ingredients for Raitha: 2 large finely chopped onions 3 large finely chopped tomatoes 2 green chillies 5-6 curry leaves 2 tbsp Oil 1/2 tbsp rai 1/2 tbsp jeera 1/4 tbsp hing 2 tbsp fresh coriander leaves 1 cup curd Steps for Paneer Pulav : 1. Wash the rice properly and add bay leaves, 2 cloves, 1 elaichi and pressure cook them as you do form your normal rice (Add little less water than usual) 2. Heat oil in kadhai and deep fry 1 cup of vertically sliced onions until they are crispy brown - Keep them aside 3. Take 3 tbsp oil in another kadhai, add 1 bay leaf and add 3/4 th Paneer cubes. Saute them well till golden crispy brown. Keep them aside 4. Take 8-10 green chillies, garlic, ginger, dry coconut - Grind them into fine paste. keep it aside 5. Heat 5-6 tbsp oil in kadhai (You can use the same oil that was used for frying onions), add 1 bay leaf, 5-6 cloves, 3-4 black pepper, 1 tbsp shah jeera, 1 tbsp hing 6. Add grinded green chilli paste saute well. 7. Add remaining 1 cup sliced onions, saute well 8. Now add remaining Veggies - Potato, carrot, Capsicum, 1 and half tbsp salt, 1 tbsp garam masala, mix well and cook for 3 mins. 9. After 3 mins, add 3 tbsp curd, 1 tbsp fresh cream (Or malai), mix well and cook for 2 more mins 10. Once the veggies are cooked, add the fried paneer, fresh coriander leaves and mix well. Turn of the stove 11. Take big bowl and transfer cooked white rice in it. Now transfer the cooked veggies, 1 tbsp salt and mix well. 12. Add fried onions, 1 tbsp ghee - Yummy Paneer Pulav is ready Steps for Raitha: 1. Heat 2 tbsp oil in kadhai 2. Add rai, Jeera, hing, curry leaves, green chillies. Allow them to crackle and turn off the stove 3. Take a big bowl and add finely chopped onions, tomatoes, oil seasoning, 1 tbsp salt, 1 cup curd, fresh coriander leaves. Mix well 4. Nourishing Raitha is ready
