Khandvi, also known as Patuli, Dahivadi or Suralichi Vadi, is a savory snack in Maharashtrian cuisine as well as in Gujarati cuisine of India.
Ingredients : (makes 30-35 Khandvi Rolls)
5-6 Green Chillies
1 inch ginger piece
1 cup Besan (Gram Flour)
1 cup Sour Curd (Khatta dahi)
1 tbsp turmeric (haldi)
1/2 tbsp salt
1 tbsp lemon juice
2 cups water
For Tempering:
4-5 tbsp oil
1 tbsp Mustard seeds (Rai)
1 tbsp Cumin Seeds (Jeera)
1/2 tbsp Hing (Asafoetida)
1 tbsp Sesame seeds (Til)
Recipe:
- Grind green chilies and ginger into a fine paste and keep aside
- Now take a big bowl and add 1 cup besan (gram Flour), 1 cup Sour curd (Use the same cup for measurements)
- Add turmeric powder, salt, lemon juice, green chili and ginger paste prepared in Step 1 and mix well
- Now add 2 cups water and mix well for no lumps
- Rest the Batter for 10 mins
- After 10 mins, heat kadhai (Wok) and add the prepared batter and cook on low flame
- Keep stirring continuously, after 5-7 minutes the batter start thickening. Turn of the stove.
- Grease 3-4 plates with oil and pour little batter and spread thin immediately (This step has to be done quick and immediately else the batter becomes even more thick and you can't spread it later)
- Spread the batter on all plates and allow them to cool
- Meanwhile, lets make our tempering -
- Heat 4-5 tbsp oil, add rai, jeera, til and hing.
- Allow them to crackle and turn off the stove
- Once the batter is cool, cut the Khandvi into vertical lines and one horizontal line at the centre as shown below
13. Start Rolling the Khandvi rolls from top
14. Pour tempering on all the khandvi rolls, garnish with fresh chopped coriander leaves and grated coconut.
15. Delicious, Mouth watering Khandvi / Surli Chi Vadi is ready 👌👌
