Falooda - Summer Special Drink

Falooda (also Faluda, Faloodah) is a cold dessert with origins in the Indian subcontinent. Traditionally it is made from mixing rose syrup / Mango syrup, vermicelli, sweet basil (sabza/takmaria) seeds with milk, often served with ice cream. The vermicelli used for preparing falooda is made from wheat,arrowroot, cornstarch, or sago - its readily available in market.

Falooda is not only a drink but can be a meal in itself. Some ingredients like soaked basil seeds have a cooling effect on the body. Falooda is also often served with various nuts.





Preparation Time: 30 mins
Cooking Time : 10 mins
Total Time: 40 mins

Ingredients for Mango : ( For two glasses of Falooda)
2 tbsp Basil seeds (Sabja seeds or falooda seeds)
one and half cup milk
2 tbsp Sugar
Handful Falooda sev
2 tbsp Mango Syrup 
2 scoops Mango / any other flavor ice cream.
few almonds and Pista ( Chopped for garnishing)

Recipe
Initial preparation
  1. Soak Basil seeds in water for at least 30 mins. After 30 mins drain them.
  2. Meanwhile take sugar and milk in a pan . let it come to a boil on medium flame, add the mango syrup, then simmer the flame for 5 mins and cool it in refrigerator. Milk becomes thick. 
Make Falooda Sev -
  1. Take some water in a pan, let it boil. Now add falooda sev to the water and let it boil for 5-7 mins till the sev gets cooked.
  2. Drain it and rinse it with cold water immediately
Dressing the Falooda -
  1. Take two glasses, add spoonful of Basil seeds to it.
  2. Next, on top of it add falooda Sev
  3. Add 1/2 tbsp of Mango syrup on top of Sev
  4. Pour the flavored milk in it, some more basil seeds on the top.
  5. Now add a scoop of Ice cream
  6. Garnish it with chopped almonds, Pista
  7. Serve immediately. 
If you want to make a Rose Falooda, instead of Mango Syrup, you can add Rose Syrup.
