Besan Laddu is a very special sweet prepared by all Maharashtrians during Diwali festival. It's a must have sweet during Diwali.

Ingredients -
18-20 small elaichi (Cardamom)
1/2 cup + 1 tbsp sugar
2 cups Besan
1 cup ghee
Desired dry fruits for garnishing
Steps -
- Heat pan and roast small elaichi's on low flame for 3-5 mins. Once elaichi's turm aromatic, keep aside and allow them to cool.
- Grind roasted elaichis (along with its cover) with 1 tbsp sugar into a fine powder. Keep aside
- Grind 1/2 cup sugar and add it to elaichi powder
- Heat pan again, add 2 cups besan and start roasting on low flame for 3-4 mins. Now slowly add ghee and keep roasting the besan. (Add ghee in portions)
- Total roasting time - 12-15 mins (ensure you roast on low flame), it turns aromatic and besan starts seperating from pan.
- Turn of the flame.
- Add the elaichi and sugar powder to the roasted besan and mix well.
- Allow it to cool and once its cool start shaping the Laddus
- Yummy Besan laddu is ready. Garnish with desired dry fruits, I have used cashew nuts and raisins (Kaju and kismis)
